Recipe: Homemade Banana Bread

Nothing about this recipe states overly healthy....but you need to indulge in something sweet every now and then and for my family it’s banana bread! Make the night before for a breakfast treat, or an afternoon snack. Pair with a glass of milk or scoop of PB to up the protein.
Ingredients:
1/2c canola oil
1c sugar
2 eggs, beaten
2-3 ripe bananas
2c flour
1 tsp baking soda
1/2 tsp baking powder
3T milk
1/2 tsp vanilla
1/2c nuts or chocolate chips
Directions:
Beat oil and sugar. Add bananas and eggs. Mix well. Mix dry ingredients together, then add to wet ingredients. Stir in milk and vanilla. Add nuts or chocolate chips if desired.

Pour into loaf pan. I choose to double the recipe and it makes 2-normal size loaf pans plus 2-mini loafs. Mini loafs make for a perfect size (3 servings/mini pan), roughly ~250 calories/serving) for a sweet treat and added potassium. Enjoy!
