For all the zucchini lovers- this is a go-to summer recipe for our family. We always seem to have an abundance of zucchini every summer- which leads me to making my grandmother’s (Ran-Ran’s) recipe almost weekly! And yes, this grandma’s recipe is healthy! Ingredients:
3 large Zucchini
1/2 lb. Lean Ground Beef
1 cup, 1% Cottage Cheese
1 Egg
1/2 cup Pasta Sauce
1/2 cup Parmesan Cheese Seasonings include: - Black pepper - Basil - Minced Onion - Parsely - Oregano
Steps: 1) Boil zucchini (10-15 min) or until slightly soft. 2) Brown ground beef, add seasonings as cooking. Drain off excess fat. Put aside....Or cook the night before. 3) Place zucchini on cutting board, cut off ends, cut lengthwise. 4) Scoop zucchini pulp out with a spoon and put aside in a bowl. Place hollow zucchini in a casserole dish (They may break apart, it’s ok! They taste the same, broken or not). 5) Mash the zucchini pulp. Add cottage cheese and egg. Mix together. 6) Add cottage cheese mixture to beef. You can add more seasonings if you wish. All have minimal sodium, so shake away! 7) Spoon mixture into hollow zucchini. 8) Spoon pasta sauce of choice on top. 9) Sprinkle with cheese. 10) Bake on 325 deg for 40 min or until bubbly. Thoughtful portion: 2 halves and serve with a side salad. And remember....Eat To Nourish!
