
Looking for a quick and easy side for the weekend?!
This quinoa and avocado salad is super quick and so nutritious! I adapted the recipe from @delicioushealthyvideos
Make quinoa as directed on package.
Cool 20-30 min after in fridge.
Add any chopped veggies you like! I used baby spinach, tomatoes, cucumber, yellow pepper, and avocados.
Splash of lemon and olive oil.
Toss with a dash of salt and pepper.
Enjoy!
