Recipe: Fruity Quinoa Salad


Delicious and healthy side for your dinner or your Memorial Day cookout! Check out the recipe below! ⁣

Ingredients: makes 4 servings ⁣

  • Quinoa (2 cups)⁣

  • Water (3 cups)⁣

  • Orange Juice (1 1/2 cups) ⁣

  • Sliced Fruits (I used blueberries, strawberries and blackberries) ⁣

  • Lime Juice (1/2c)⁣

  • Honey (1-2T)⁣

  • Salad of Choice (I used baby spinach) ⁣

  • Any other toppings: nuts, seeds, etc... (I used sliced almonds) ⁣

Steps: ⁣

1) Boil quinoa with water and OJ, let simmer for 10-15 min until liquid is dissolved and quinoa is soft.⁣

2) Pour quinoa into a serving bowl. Add a splash of OJ if quinoa is dry and stir.⁣

3) Place 1/2c of quinoa mixture over a bed of greens.⁣

4) Add fruit of choice.⁣

5) Sprinkle with toppings.⁣

6) Drizzle honey lime dressing over top.⁣
