Ingredients: makes 4 servings
Quinoa (2 cups)
Water (3 cups)
Orange Juice (1 1/2 cups)
Sliced Fruits (I used blueberries, strawberries and blackberries)
Lime Juice (1/2c)
Honey (1-2T)
Salad of Choice (I used baby spinach)
Any other toppings: nuts, seeds, etc... (I used sliced almonds)
Steps:
1) Boil quinoa with water and OJ, let simmer for 10-15 min until liquid is dissolved and quinoa is soft.
2) Pour quinoa into a serving bowl. Add a splash of OJ if quinoa is dry and stir.
3) Place 1/2c of quinoa mixture over a bed of greens.
4) Add fruit of choice.
5) Sprinkle with toppings.
6) Drizzle honey lime dressing over top.
