Happy Monday! What crazy weather this weekend- Saturday brought snow and wind, Sunday brought sun and warmth! Definitely ready for this warm weather to stick after yesterday’s sunshine
Weekends for me equals meal prep- not always, but I try to prep at least one meal for the week ahead, this weekend it was these Egg Muffins. What a quick and easy way to make a hearty and healthy breakfast for your busy work/school days. Throw in your toppings of choice and healthy breakfast, lunch or dinner at your finger tips.
Recipe: I used a 6 muffin pan, could easily do 12 to make more...and what a simple idea for a brunch or church potluck!
~ Spray each hole with nonstick spray.
~ Fill each muffin hole with one egg.
~ Break yolk with fork.
~ Add toppings and mix again. I used ham, cheese, arugula, red pepper, dash of salt and pepper.
~ I added a splash of half and half to each one and mixed again.
**Bake on 325 deg. for 20-25 min depending on oven. Let cool and store in fridge up to 5 days!! Enjoy!
