Recipe: Chicken Penne with Veggies ⁣


A one pot dish makes this a family favorite for us! And better yet, only one pan to wash!⁣


Ingredients: 6-8 servings ⁣

- Chicken (3 breasts cubed)⁣

- Favorite Noodle (1 box)⁣

- Thick-Cut Deli Ham (1/2 slice, cubed)⁣

- Orange Pepper⁣

- Yellow Pepper⁣

- Onion⁣

- Fat-Free Half and Half⁣

- Garlic Powder⁣

- Black Pepper⁣

- Red Pepper Flakes (if desired)⁣

- Parmesan Cheese ⁣

- Extras (tomatoes, mushrooms, avocado, etc....)⁣

Steps:

  1. Boil noodles 8-10 min, set aside.

  2. Sauté onion and peppers with olive oil, 5-7 min or until soft. Set aside.

  3. Cube chicken, sauté with olive oil. Season with garlic powder and pepper. Brown on both sides.

  4. Add ham and mix until ham is warm.

  5. Add chicken, ham, and veggies to pasta.

  6. Add 1/2c fat-free half and half, stir on stovetop until it thickens.

  7. Sprinkle parmesan cheese, any other garnishes of choice and red pepper flakes. ⁣
